EVO CHIPOTLE PEACH MOJITO

Items Needed:

  • Sugar rimmed high ball glass

  • Cocktail shaker

  • Mortar and pestle

Ingredients:

  • Lime wheels, wedges (2-4)

  • Fresh Mint leaves, 6

  • Fresh Mint Sprig

  • Crushed Ice

  • Lime Juice from Concentrate

  • Club soda

  • 2 (two) oz rum (your favorite clear rum)

  • Juice from ½ (one-half) fresh lime

  • 2 (two) tbsp simple syrup (bought at the grocery store, or you can make your own - Recipe: equal parts water to sugar)

  • 3 (three) tbsp EVO Chipotle Peach Sauce

  • 2 (two) tbsp lime juice from concentrate

Directions:

  1. Using a mortar and pestle, muddle 6 (six) fresh mint leaves with fresh lime wedges

  2. Add ice cubes to cocktail shaker, add rum, muddled mint and limes wedges

  3. Add simple syrup, chipotle peach sauce, lime juice from concentrate to shaker

  4. Shake

  5. Moisten rim of high ball glass with damp paper towel and turn rim in sugar laid on a plate

  6. Add crushed ice to high ball glass

  7. Pour mojito mixture into glass and finish with club soda

  8. Garnish with lime wheels and fresh mint sprig

**Variation: You can add additional Chipotle Peach sauce and an extra oz of rum if you wish.
